2017 Greco (Gippsland)
Description
The 2017 Greco is difficult to source, as it is not grown widely outside of Italy. Greco di Tufo is a facinating grape, used to make everything from dry and crisp field blends, to rich and luscious dessert wines.
Mark distilled this spirit from one of Australia’s only plantings of the grape, courtesy of Momento Mori. The fermentation was unique: whole bunch fermented for the best part of the year, then free drained. In Mark’s hands, the skins and stems produced a radical, interesting spirit, with aromas and flavours reminiscent of classic French digestifs.
